Ginseng and dried tangerine peel each 3g, deer tail and one whole hen each 1 piece, ham meat, lean pork, rehydrated mushrooms each 50g, cooking wine, refined salt, sugar, green onions, ginger, and clear broth as needed. Briefly soak deer tail in boiling water, wash off impurities, then blanch in boiling water for 10 minutes, remove hair by repeated scalding and peeling. Heat oil in pan until nearly smoking, add green onions and ginger to stir-fry until fragrant, pour in cooking wine, add water, place deer tail in pot and simmer for 10 minutes, then remove. Reheat oil, stir-fry ginger and green onions, add cooking wine, dried tangerine peel, deer tail, and water, simmer for 10 minutes, remove ginger and green onions, then gently braise on low heat for another 10 minutes, remove deer tail. Wash and clean the hen, cut off claws, split in half, blanch briefly in boiling water, remove large bones. Cut lean pork and ham into three pieces each; blanch pork briefly, wash clean, then place with ham, mushrooms, and hen in a bowl. Wash ginseng, steam until soft, slice thinly, place with dried tangerine peel in a basket, then place sliced deer tail on both sides of the chicken. Pour clear broth into pot, add sugar, bring to boil, transfer to serving vessel, cover with wet cotton paper, steam for 1.5 hours, remove cover, add salt to taste.
