Carrots are particularly rich in beta-carotene, with content reaching 4.05 mg per 100 grams. Beta-carotene converts to vitamin A in the liver, where 1 microgram of beta-carotene equals 0.167 micrograms of vitamin A, hence it is also known as provitamin A. Recent research suggests beta-carotene may have superior anti-cancer properties compared to vitamin A, without the risk of vitamin A toxicity. It helps prevent gastric cancer, lung cancer, breast cancer, cervical cancer, bladder cancer, and skin cancers—all epithelial tumors.
Carrots are sweet and neutral in nature, beneficial for strengthening spleen function, resolving food stagnation, relieving distension, and suitable for individuals with poor digestion.
