Whooping Cough Formula Five
Pork kidneys 4 pieces, tomatoes 2 pieces, agar 10 g, sugar 400 g, tian冬 (Tian Dong) and bai bu (Bai Bu) each 9 g, sang ye (Sang Ye), qian hu (Qian Hu), gan cao (Gan Cao), zi yuan (Zi Yuan), dong hua (Dong Hua), zhi ke (Zhi Ke) each 8 g, zhi mu (Zhi Mu) 7 g, xing ren (Xing Ren) 8 g, ju geng (Ju Geng) 6 g, fresh weigen (Wei Gen) 20 g, zhu ru (Zhu Ru) 12 g, cong jie (Cong Jie) 15 g, ginger block 4 g.
Pork kidneys washed clean, halved, remove kidney core and white tendons, slice thinly. Red tomatoes blanched briefly in boiling water, peel removed, sliced thinly. Agar washed clean, herbs cleaned of impurities, decocted in sand pot with water to extract juice, filter out sediment. In a wok over medium heat, pour in the decoction, add ginger and scallions, place kidney slices in, cook until done, transfer to a porcelain dish, spread tomato slices evenly on top. Then add agar to remaining decoction, simmer over low heat until dissolved, dissolve sugar, pour over kidney slices, cool, refrigerate until set into jelly, cut into triangular portions. Serve as a side dish. This formula is suitable for pediatric whooping cough.
