Eel 500 grams, codonopsis root and angelica root each 15 grams, scallions and ginger as needed.
Remove head, bones, and internal organs from eel, wash clean, cut into strips; wrap codonopsis and angelica in gauze; place eel strips and medicinal bag in pot, add sufficient water, cook into soup. Remove medicinal bag, season with salt, scallions, and ginger. Serve as meal accompaniment.
Eel is the flesh or whole body of the yellow eel (Monopterus albus), a species of the Moringidae family. It inhabits rivers, lakes, ditches, and rice fields. Widely distributed across China except in northwestern and southwestern regions. Known for its delicious taste and rich nutrition, it is a popular aquatic product. Analysis shows that every 100 grams of eel contains 18.8 grams protein, 0.9 grams fat, 38 mg calcium, 150 mg phosphorus, and 1.6 mg iron.
