Stir-Fried Fresh Shrimp with Leeks
Ingredients: 250g fresh shrimp, 100g tender leeks, appropriate amounts of refined vegetable oil, yellow wine, soy sauce, ginger threads, and vinegar.
First, clean the shrimp, remove shells, and take out the shrimp meat. Wash and chop the leeks into 3cm segments. Heat oil in a wok to medium heat, stir-fry shrimp meat, add yellow wine, soy sauce, vinegar, and ginger threads, briefly cook, then set aside. Stir-fry leeks in vegetable oil until tender, add shrimp meat, stir-fry evenly, and serve. This dish features white shrimp and green leeks, fresh, tender, and crisp, with benefits of tonifying the kidneys and strengthening yang.
Stir-Fried Black Fungus with Shrimp Meat
Ingredients: 200g rehydrated black fungus, 100g shrimp meat, 200g chicken broth, 50g chicken mince, 30g sesame seeds, 25g yellow wine, 50g fresh tomato, 15g ginger juice, 50g spinach leaves, 1000g refined vegetable oil (actual usage ~100g), scallion flakes, dry starch, refined salt, and MSG.
First, marinate shrimp meat, then briefly fry. Wash and soak rehydrated black fungus, squeeze out moisture, chop finely, place in a bowl, add refined salt, MSG, sesame seeds, chicken mince, dry starch, and chicken broth, mix thoroughly, knead into small balls (~10g each), each containing one shrimp meat. Chop tomatoes into chunks. Heat oil in a wok to 70% heat, fry the balls lightly, then remove and drain in a colander. Heat oil again, add scallion flakes and tomato chunks, stir-fry briefly, add yellow wine and ginger juice, pour in chicken broth, refined salt, MSG, bring to a boil, add the balls, simmer briefly to absorb flavor, add spinach leaves, thicken with wet starch, stir well, and serve. This dish is savory and delicious, with tender shrimp and rich aroma, nourishing yin, strengthening yang, and tonifying liver and kidneys.
