White Pepper Warms the Stomach, Black Pepper Nourishes the Kidneys
Pepper is not only a common seasoning but also possesses medicinal properties, capable of providing dietary therapy. However, peppers come in black and white varieties, each suited for different dishes, and differ in nutrition and therapeutic effects.
Overall, peppers grow predominantly in hot, humid regions, with a pungent, warm nature—thus strongly warming the center, dispelling cold, and relieving pain. The more southerly the growing region, the warmer the pepper becomes, absorbing more yang heat from the south. Therefore, Hainan white pepper has the strongest warming effect.
White pepper has slightly higher medicinal value and somewhat lesser flavoring role. Its taste is more pungent than black pepper, thus stronger in dispersing cold and aiding digestion. People with lung cold and phlegm can add white pepper to lamb soup to warm the lungs and resolve phlegm. Some people suffer abdominal pain due to cold in the gastrointestinal tract; adding ginseng and white atractylodes to stewed meat along with a bit of white pepper not only disperses cold but also warms and tonifies the spleen and stomach. When eating cold salads, it’s best to sprinkle a little white pepper powder to counteract cold and prevent chill.
TCM believes dark-colored foods enter the kidneys. Thus, black pepper has a pronounced effect in warming and tonifying the spleen and kidneys, treating "morning diarrhea" (chronic morning bowel movements caused by spleen-kidney deficiency). The remedy: drink meat soup seasoned with black pepper the night before. When cooking with black pepper, note two points:
First, avoid prolonged cooking with meat, as black pepper contains volatile oils; excessive heat causes the unique spicy aroma to evaporate.
Second, higher heat enhances pepper’s flavor, making it ideal for iron plate dishes.
Since pepper is highly warming, consuming it easily activates internal yang energy. Therefore, limit intake—0.3–1 gram per serving is optimal. Additionally, those with inflammation or heat conditions should temporarily avoid pepper, otherwise it may exacerbate fire and impair qi.
