With the arrival of fresh bamboo shoots, their tender and delicious flavor makes them popular among many. However, doctors warn: beware of allergies when eating bamboo shoots, especially for elderly and children who should limit intake—no more than half a shoot per meal.
According to TCM, bamboo shoots have benefits including nourishing yin, enriching blood, resolving phlegm, aiding digestion, and promoting urination. However, their high fiber content is hard to digest, and they contain insoluble oxalic acid. To prevent allergic reactions, try a small amount first. If any reaction occurs, stop immediately. If no reaction, you may eat slightly more. When stir-frying bamboo shoots, blanch them in boiling water for 5–10 minutes first, then combine with other ingredients. This not only breaks down most oxalic acid through heat but also eliminates bitterness, enhancing flavor. Also, avoid eating bamboo shoots with seafood to prevent skin diseases.
