Angelica and Codonopsis Stewed Female Snow Chicken
Ingredients and Preparation: Angelica 20g, Prince’s Ginseng 30g, one male chicken, ginger paste, cooking wine, fine salt, sesame oil, scallions, monosodium glutamate, as needed. Slaughter the snow chicken, remove feathers, internal organs, and blood, then wash clean. Place angelica and prince’s ginseng inside the chicken cavity. Put into a large clay pot with cooking wine, fine salt, ginger paste, scallions, and water. Boil over high heat, then simmer over low heat until meat is tender. Ingredients and Preparation: Soft tofu 500g, carp fish roe 50–150g, one egg, mimosa flower 10g, flour, water starch, ginger threads, scallions, fine salt, soy sauce, Sichuan pepper, monosodium glutamate, pork lard, as needed. Blanch soft tofu in boiling water for 1 minute, drain, cut into large pieces resembling braised meat. Simmer mimosa flower in a clay pot with water, collect first and second decoctions, mix and reserve. Beat egg whites in a bowl, add flour, fine salt, and water starch, mix into a batter. Heat a wok over high flame, add about 500g pork lard. When hot, dip each tofu piece in the batter and fry until golden red. Remove and arrange in a porcelain bowl. Reheat the wok, pour in the mimosa flower decoction, add fish roe, ginger threads, fine salt, cooking wine, Sichuan pepper, scallions, and soy sauce. When fish roe is cooked, add water starch and monosodium glutamate, thicken with sauce. Steam the tofu until fully cooked, remove, invert onto a large plate, and pour the sauce over.
