Bitter Melon with Lychee (Summer Dietary Therapy)
Lychee tends to cause heatiness, but when mixed with bitter melon as a cold appetizer, not only is the flavor good, but it also helps cool down and reduce internal heat.
Halve one bitter melon, remove the seeds, wash and slice thinly, then marinate with refined salt for 10 minutes, rinse clean, blanch briefly in boiling water, drain, and remove some of the bitterness. Add salt, monosodium glutamate, and sesame oil, then mix thoroughly with 20 peeled and pitted lychee flesh. This dish features green bitter melon and white lychee, with a crisp and tender texture, making it an excellent seasonal delicacy for summer.
