Summer Foods to Combat Fatigue

It is unwise to overindulge in chicken, fish, meat, and eggs when feeling tired. Fatigue leads to accumulation of acidic substances in the body, and meat foods are acidic, worsening fatigue. Conversely, fresh vegetables and aquatic products—alkaline foods—help restore acid-base balance and alleviate fatigue.
Recommended dish: Grape Juice Mixed Vegetables
Ingredients: 80 grams each of broccoli, Chinese cabbage hearts, pearl bamboo shoots (corn shoots), and eggplants.
Preparation: 1. Cut broccoli and cauliflower into small florets. Blanch pearl bamboo shoots, broccoli, and cauliflower in oil and salted boiling water, then rinse under cold water and drain.
2. Steam eggplant slices until cooked.
3. Prepare grape juice sauce: Sauté curry powder and flour in hot oil, add vegetable stock, stir slowly over low heat, then add salt, sugar, coconut milk, and light cream. Boil and remove from heat. Pour over fresh vegetables, place in oven at 170°C until surface turns golden brown.
