Summer Anti-Fatigue Dishes
It is unwise to eat large amounts of chicken, fish, meat, and eggs when feeling fatigued. Fatigue causes accumulation of acidic substances in the body, and meat foods are acidic—worsening fatigue. Conversely, fresh vegetables and aquatic products, being alkaline, help restore the body’s acid-base balance and relieve fatigue.
Recommended dish: Grape Juice Mixed Vegetables
Ingredients: 80 grams each of broccoli, Chinese broccoli, pearl bamboo shoots (corn shoots), and eggplant.
Preparation: 1. Cut broccoli and cauliflower into small florets. Blanch pearl bamboo shoots with oil and salt in boiling water, then cool under cold water and drain.
2. Steam eggplant slices until cooked.
3. Prepare grape juice sauce: Sauté curry powder and flour in hot oil, add vegetable broth, stir slowly over low heat, then add salt, sugar, coconut milk, and light cream. Boil and remove from heat. Pour over fresh vegetables and bake in oven at 170°C until golden brown on top.
