Assessing alcohol quality primarily relies on three indicators: color, aroma, and taste.
1. Spirits: Clear, colorless, transparent spirits should have no suspended particles or sediment. Pour the liquor into a glass and check for ring-like stains; under bright light, observe for any floating particles or precipitates—none indicates superior quality. Aroma is assessed by smell: good spirits release a harmonious, pleasant fragrance immediately upon opening the bottle. Experts and frequent drinkers can identify the main aroma type—e.g., clear-type spirits are pure and fresh, with balanced aromas; strong-type spirits are richly fragrant; sauce-type spirits are mellow and aromatic; rice-type spirits are sweet and delicate. Taste should be full-bodied, free of off-flavors or harsh irritation. High-quality spirits fill the mouth with fragrance upon first sip, leaving a lingering aftertaste. Evaluation requires careful tasting with the tip and back of the tongue and throat to discern the quality and superiority of the flavor.
2. Yellow Wine: Good yellow wine should be pale yellow and clear, or light brownish-red, depending on the variety, with luster and no sediment. Superior quality features rich aroma without foreign odors; taste should be smooth and slightly sweet, without sourness or astringency.
3. Wine: Numerous varieties exist with diverse styles. Due to grape variety, red wines vary in color from deep ruby to garnet red, pomegranate red, onion-skin red, or purple red. Excellent dry red wines are bright red, rich yet not harsh, harmonious and smooth, non-astringent and non-irritating, with abundant, complex wine aroma.
4. Beer: High-quality beer must be pure, full-bodied, refreshing, and satisfying ("killing" the thirst). Failure to meet these criteria indicates inferior quality. Good beer must be clear and transparent, with color varying significantly by type. Light beers should be pale yellow, with lighter shades preferred. Dark beers should be black-red or dark brown. Foam is a key indicator of beer quality: upon pouring, foam should rise immediately, appearing white and fine, clinging to the glass persistently. Sniffing freshly poured beer reveals a strong aroma of hops, malt, or fermentation. Drinking a sip brings a refreshing sensation, marked by comfort, fullness, purity, and carbonation that stimulates the palate. Notably, beer that violently sprays upon opening is not high quality. Experts believe such "fountain effect" results not from high gas content but from improper raw material handling or production processes leading to poor CO₂ dissolution. Superior beer contains high, well-dissolved CO₂; upon consumption, part of the gas slowly releases, removing body heat—this is one reason why beer provides refreshing comfort in summer as a cool beverage.
