1 yellow croaker, 100 grams egg white, 2 tomatoes, small amounts of dried mushrooms, bamboo shoots, carrots, and green peas, and appropriate amounts of cooking wine, table salt, MSG, white pepper powder, chicken oil, salad oil, starch, clear soup, green onions, ginger, and garlic. Remove gills, scales, and internal organs from the yellow croaker, wash thoroughly, then remove head, tail, bones, and skin, cutting the flesh into rectangular slices. Mix egg white with a little starch to form a foam batter. Marinate the fish slices with salt, cooking wine, white pepper powder, and MSG, then coat evenly with the foam batter. Deep-fry in hot oil until golden brown, arrange on a plate. Chop green onions, ginger, and garlic finely, sauté lightly in a wok, then add clear soup, salt, MSG, and cooking wine. Thicken with starch slurry, drizzle with chicken oil, and pour over the fish slices. Cut tomatoes into wedges and place around the plate as garnish.
