Two Hemp Pork Intestine Hot Pot
[Ingredients] 30 grams of cimicifuga, 100 grams of black sesame seeds, 100 grams of vegetable oil, 100 grams of lean pork, 1000 grams of pig intestine, 2 pig kidneys, 250 grams of eel, 150 grams each of ox tongue, enoki mushrooms, potatoes, soaked wood ear fungus, 300 grams of Chinese cabbage, 200 grams of lettuce leaves, 50 grams of doubanjiang (fermented broad bean paste), 15 grams of salt, 10 grams each of rock sugar and Sichuan peppercorns, 20 grams of douchi (fermented black beans), 50 grams each of fermented rice wine juice, old ginger, garlic, lard, beef tallow, 3 grams of monosodium glutamate, 3000 ml of clear broth, a little vinegar.
[Preparation] 1. Wash cimicifuga, pat dry, slice; wash black sesame seeds, pat dry; clean pig intestine with salt and vinegar, rub repeatedly until no mucus remains, turning white and odorless, then blanch in boiling water, rinse twice with warm water, drain, cut diagonally into 4–5 cm segments; wash lean pork, slice; remove outer membrane from pig kidneys, halve, remove all impurities, slice into 0.2 cm thick pieces, soak in water to remove blood, then drain; split eel open, bleed, remove bones and head, cut into 4 cm lengths; split ox tongue lengthwise, soak in water, clean, score crosswise, cut into 6 cm × 2 cm strips; trim roots and stems from enoki mushrooms, wash; wash Chinese cabbage, cut into chunks; wash lettuce leaves. Arrange all ingredients separately around the hot pot.
2. Heat a wok over fire, add vegetable oil until four-tenths hot, fry Sichuan peppercorns briefly, remove. Add beef tallow and lard, heat to five-tenths, add doubanjiang, stir-fry until fragrant. Add old ginger, garlic, and clear broth, bring to a boil, then add douchi, fermented rice wine juice, rock sugar, simmer for a while, add intestine segments and cimicifuga, cook for 15 minutes, skim off foam, pour into hot pot. Add monosodium glutamate and other seasonings, ready for dipping and cooking various ingredients.
[Usage] Serve as a meal; alternatively, prepare a dipping sauce with cooked oil, monosodium glutamate, and minced garlic for dipping.
[Efficacy] Elevating central qi, nourishing liver and kidneys.
[Indication] Suitable for rectal prolapse, uterine prolapse in women, rectal prolapse, and gastric ptosis.
[Comment] Cimicifuga is effective for treating rectal prolapse, uterine prolapse, deficiency of central qi, and spleen deficiency diarrhea. Black sesame seeds nourish liver and kidneys, moisten the five zang organs. Pig intestine supplements deficiency in the lower jiao.
