Winter Melon Meat Steamed Bun
[Ingredients] Flour 850 grams, starter dough 150 grams, pork 100 grams, winter melon 750 grams, soy sauce 14 grams, ginger 10 grams, green onion 10 grams, salt 8 grams, monosodium glutamate 3 grams, sesame oil 5 grams, alkali as needed.
[Preparation] Mix flour with starter dough and warm water, knead evenly, let ferment, then add alkali to neutralize sourness. Chop pork into paste, mix with soy sauce, monosodium glutamate, sesame oil, green onion, and ginger. Cut winter melon, remove peel, mash finely, add a little salt, wrap in gauze, squeeze out moisture, mix into meat filling. Shape buns.
[Usage] Place shaped buns in steamer, steam over high heat for 20 minutes. Can be used as staple food.
