Goji Berry and Beef Dish
Fried beef shank meat 500 grams, goji berries 50 grams, one egg, seasonings as needed. Half of the goji berries are extracted by boiling water method to obtain concentrated juice 25 ml; the other half is steamed until soft and set aside. Cut beef into chunks, mix with egg, starch, flour, and water to form a paste. When oil reaches 50% heat, fry each piece until golden brown, then remove and drain oil. Place scallions, ginger, garlic, Sichuan pepper, and goji berries at the bottom of a bowl, arrange beef on top, add clear broth, season with salt and cooking wine, steam over high heat for 30 minutes. Transfer the broth to a pot, bring to boil, add sesame oil, vinegar slightly, goji berry concentrate, stir in monosodium glutamate after boiling, pour over the inverted beef on the plate.
