Ox Tripe Soup for Stomach Tonic
1000 grams of ox tripe, 2 fresh lotus leaves, appropriate amounts of fennel, cinnamon bark, ginger, black pepper, yellow wine, and salt. Wash ox tripe once, then rub thoroughly with half a bowl of salt and vinegar, followed by rinsing repeatedly with cold water. Place fresh lotus leaves at the bottom of a clay pot, lay ox tripe inside, cover with water, bring to boil over high heat, then simmer over medium heat for 30 minutes. Remove, cut into small pieces, return to the pot, add 3 spoons of yellow wine, a little fennel and cinnamon bark, then stew over low heat for 2 hours. Add salt, ginger, and a little black pepper powder, continue stewing for another 2–3 hours until tripe is very soft. Drink one small bowl of soup per serving, twice daily, and consume ox tripe as a side dish. Functions: Tonify the center, boost Qi, strengthen spleen, aid digestion.
