Bitter Melon Minced Meat Stew
Ingredients: Bitter melon 300g, minced meat 200g, dried shrimp 10g, bamboo shoots 20g, salt ½ teaspoon, MSG ½ teaspoon, sesame oil, green onions, ginger, garlic each 50g, one egg, one bowl of stock, pepper powder, cornstarch as needed.
Preparation: Halve the bitter melon, scoop out the inner pulp, cut into 3cm pieces. Mix minced meat with dried shrimp, chopped bamboo shoots, green onions, ginger, garlic, salt, MSG, pepper, and sesame oil. Beat in egg and cornstarch to form filling. Lightly coat the inside of bitter melon segments with cornstarch, pack with filling, smooth the surface, steam for 20 minutes, then transfer to a pot, add stock, simmer for 30 minutes, adjust seasoning.

McDowell’s Stewed Softshell Turtle
Ingredients: McDowell’s 5g, goji berries 5g, polygonatum 8g, softshell turtle 150g; two small spoons of wine, one small spoon of salt.
Preparation: Clean and slaughter the softshell turtle, blanch briefly, cut into chunks, and stew in water for one hour. Wash herbs, place in pot, add seasonings, simmer gently for 30 minutes.

Ingredients: Raw rehmannia root 30g, rice 50g.
Preparation: Wash rehmannia root, boil in water to extract juice. When rice porridge is nearly done, add the juice and cook until fully done. Consume immediately—do not store for long.
