Ginseng Chicken Hot Pot

[Ingredients] Ginseng 20 grams, hen meat 1500 grams, soaked sea cucumber, beef ring throat, and pork fat each 200 grams, lean pork, pig tongue, carrot, lettuce each 150 grams, pea shoots, fermented glutinous rice juice each 100 grams, cooking wine 50 ml, Sichuan pepper 10 grams, soy sauce 15 ml, refined salt, rock sugar, green onion each 15 grams, monosodium glutamate 5 grams, ginger 20 grams, white pepper powder 3 grams, fresh broth 2500 ml.
[Preparation]
1. Wash ginseng, briefly boil in a small amount of water, remove, slice, then return to original pot and boil for 15 minutes, remove and place in a bowl, keep covered with original broth. Wash hen meat, pat dry, cut into 4 cm cubes, blanch in boiling water, then remove. Remove tendons from lean pork, blanch in boiling water, remove, slice. Scrape and clean pig tongue, blanch in boiling water. Clean sea cucumber thoroughly, slice lengthwise, soak in water. Remove skin and tendons from beef ring throat, score with floral patterns, cut into about 8 cm strips. Peel and remove fibers from carrots and lettuce, slice. Wash pea shoots. Crush green onions, cut into segments. Place all ingredients except hen meat cubes and ginseng slices separately on plates for serving.
2. Heat pork fat in a wok over medium flame until half hot, first fry ginger, green onion, and Sichuan pepper until fragrant, then add chicken cubes, salt, soy sauce, cooking wine, fermented glutinous rice juice, rock sugar, stir briefly, add fresh broth, bring to boil, add white pepper powder and monosodium glutamate, boil for 10 minutes—ready for dipping various ingredients. Serve with sesame oil, garlic paste, vinegar, salt as dipping sauce, and drink the soup.
