Fo-Ti Mountain Chicken
[Ingredients] 2 mountain chickens, 10 grams processed Fo-Ti (Polygonum multiflorum), 100 grams green peppers, 15 grams winter bamboo shoots, 10 grams soy sauce, 20 milliliters cooking wine, 1 gram monosodium glutamate, 2 grams refined salt, 20 grams cornstarch, 1 egg, 1000 grams vegetable oil (actual consumption 60 grams).
[Preparation] Wash Fo-Ti with clean water, boil twice in aluminum pot, collect total 20 ml of decoction. Remove feathers from mountain chickens, gut, wash, remove bones, cut into cubes. Cut winter bamboo shoots and green peppers into cubes. Separate egg yolk, keep only egg white. Mix egg white with cornstarch, add half to marinate chicken cubes with a little salt. Use the other half mixed with cooking wine, soy sauce, monosodium glutamate, and Fo-Ti decoction to make marinade. Heat clean wok, add vegetable oil, heat to six-tenths, fry chicken cubes until tender, remove and set aside. Wipe wok, leave residual oil, add chicken cubes, winter bamboo shoots, green peppers, pour in marinade, stir-fry and thicken with cornstarch, then serve.
