Double Hemp Pork Intestine Hot Pot
[Ingredients] 30g Cimicifuga heracleifolia, 100g black sesame seeds, 100g vegetable oil, 100g lean pork, 1000g pig intestines, 2 pig kidneys, 250g eel, 150g ox tongue, 150g golden needle mushrooms, 150g potatoes, 150g soaked wood ear mushrooms, 300g Chinese cabbage, 200g lettuce leaves, 50g doubanjiang (fermented broad bean paste), 15g refined salt, 10g rock sugar, 10g Sichuan peppercorns, 20g fermented black beans, 50g laozao juice (fermented rice wine), 50g old ginger, 50g garlic, 50g lard, 50g beef tallow, 3g monosodium glutamate, 3000ml fresh broth, and a little vinegar.
[Preparation]
1. Wash and dry Cimicifuga heracleifolia, slice; wash and dry black sesame seeds; clean pig intestines thoroughly with salt and vinegar, rub repeatedly until no mucus remains, color turns white, odor disappears, blanch briefly in boiling water, then rinse twice with warm water, drain, cut into 4–5cm sections diagonally; wash lean pork, slice; remove outer membrane from pig kidneys, halve, remove kidney core, slice into 0.2cm thick pieces, soak in water to remove blood, then drain; split eels, bleed, remove bones and heads, cut into 4cm lengths; split ox tongue lengthwise, soak in water, wash, score crosswise, cut into 6cm × 2cm strips; trim stems and roots from golden needle mushrooms, wash; wash Chinese cabbage, cut into chunks; wash lettuce leaves. Arrange all ingredients separately around the hot pot.
2. Heat vegetable oil in a wok until four-tenths hot, fry Sichuan peppercorns briefly, discard; add beef tallow and lard, heat to five-tenths hot, add doubanjiang, stir-fry until fragrant, add old ginger, garlic, and fresh broth, bring to a boil, add fermented black beans, laozao juice, rock sugar, simmer for a while, then add intestine sections and Cimicifuga heracleifolia, cook for 15 minutes, skim off foam, transfer to hot pot, add monosodium glutamate and other seasonings, ready for boiling ingredients.
[Usage] Serve as a meal accompaniment; alternatively, mix with cold vegetable oil, monosodium glutamate, and garlic paste to make a dipping sauce for eating.
[Efficacy] Elevates central qi, nourishes liver and kidneys.
[Indications] Suitable for rectal prolapse, uterine prolapse in women, rectal prolapse, and gastric ptosis.
[Note] Cimicifuga heracleifolia treats rectal prolapse, uterine prolapse, deficiency of central qi, and spleen deficiency diarrhea. Black sesame seeds nourish liver and kidneys, moisten the five viscera. Pig intestines tonify lower jiao deficiency.
