Five-Colored Shrimp
Ingredients:
250g shrimp, 25g each of peas, carrots, cake cubes, rehydrated mushrooms, half an egg, 6g sesame oil, 3g refined salt, 5g cooking wine, 15g starch, a little green onion and ginger, 300g vegetable oil (actual usage 30g).
Preparation Method:
1. Clean the shrimp, pat dry with clean cloth, mix with salt, then add egg white and dry starch. Set aside.
2. Blanch carrot and mushroom cubes in boiling water until cooked.
3. Heat a wok, add oil until medium-hot, fry shrimp until loose, then drain oil. Leave a little oil in the pan, stir-fry green onion and ginger, add a bit of chicken broth (or water), then add peas, carrots, mushrooms, cook briefly, followed by cake cubes. Add salt and cooking wine, thicken with wet starch, pour in shrimp, drizzle sesame oil, and serve.

1. Shrimp is extremely nutritious, containing protein levels several to dozens of times higher than fish, eggs, and milk. Shrimp is high in calcium and magnesium, with a calcium-to-magnesium ratio of exactly 2:1—the ideal proportion for human calcium absorption. Moreover, shrimp is rich in vitamin D, the highest among seafood, and both vitamin D and magnesium promote calcium absorption. Shrimp also contains potassium, selenium, other trace elements, and vitamin A. White shrimp excels at invigorating qi and stimulating appetite; black shrimp is known for promoting lactation and detoxification.
2. The five-colored shrimp dish features tender, flavorful shrimp meat—free from fishy odor and bones—suitable for all ages.
