Tomatoes are rich in nutrients and beneficial when consumed regularly. Most people usually eat them raw, in soups, or scrambled with eggs. Here are some alternative ways to enjoy tomatoes—take advantage of their abundance in summer and try new preparations.
Tomato Ice: Ingredients: 500 grams of tomatoes, 100 grams of sugar. Preparation: ① Select fresh, ripe tomatoes, wash, cut into small pieces, mix with sugar, and marinate for two hours (or heat to boiling), then let sit to extract juice. ② Pour the mixture into ice cube trays and freeze in the refrigerator. Specialty: Bright red color, tangy sweet taste, refreshing and appetizing.
Tomato Ice Cream: Ingredients: 100 grams of tomatoes, 100 grams of milk, 30 grams of cream, 70 grams of water, two eggs, 50 grams of sugar, a little flavoring. Preparation: ① Wash and peel tomatoes, chop finely, add water and boil into sauce. Boil milk separately. ② Gradually stir sugar and eggs into slightly cooled tomato sauce, then add milk, mix well. ③ Heat the mixture, filter, cool down, add cream and flavoring, mix thoroughly. ④ Freeze in the refrigerator, stirring occasionally until solid. Specialty: Tangy sweet taste, distinct tomato flavor, not greasy.
Tomato Congee: Ingredients: 250 grams of tomatoes, 200 grams of rice (or glutinous rice), 150 grams of sugar, 1000 grams of water. Preparation: ① Wash tomatoes, peel off outer skin, dice. ② Boil water, add rice to make congee. ③ Add sugar and tomatoes to the rice porridge, continue boiling briefly, then pour out and cool. ④ Store the congee in the refrigerator; take out as needed. This dish helps quench thirst and aids digestion.
