Three Tonic Formulas for Summer Deficiency (Dietary Therapy)

Clear and Moisture-Rich Melon Strips
· Ingredients: 300 grams of fresh watermelon rind, 50 grams each of Tian Dong (Asparagus root) and Mai Dong (Ophiopogon root), 5 grams of Bo He (mint), and appropriate amounts of cooking oil, sesame oil, sugar, and refined salt.
· Preparation: Soak Tian Dong and Mai Dong in water until swollen, split open, remove inner cores, and slice into fine strips. Wrap Bo He in gauze, combine with Tian Dong and Mai Dong strips, boil in water until cooked, remove the herb bag, discard the decoction, then drain and set aside. Peel the green outer layer from the watermelon rind, cut into thin strips, lightly salt and marinate for 1–2 hours, then drain excess liquid. Heat oil in a wok, stir-fry all three types of strips over high heat briefly, then add sesame oil and sugar, mix well and serve.
This dish is crisp, fragrant, sweet, and refreshing without being greasy. Tian Dong and Mai Dong both have moistening lung and nourishing yin, as well as stomach-quenching properties. Adding a small amount of mint enhances the heat-clearing and cooling effect, giving a refreshing sensation.
Assorted Vegetables Stir-Fry
· Ingredients: Small amounts of golden needle mushrooms and black fungus, 10 tofu puffs, 3 pieces of tofu skin, 2 green peppers, 100 grams of fresh lily bulbs, 10 grams of Kuan Dong Hua (Winter Flower), 20 grams of Bei Sha Shen (Northern Sand-Participating), 20 grams of Jie Geng (Platycodon root), and appropriate amounts of cooking oil, sesame oil, refined salt, sugar, scallions, and monosodium glutamate.
· Preparation: Separate fresh lily bulbs, remove outer skins, wash, blanch briefly in boiling water. If fresh lilies are unavailable, use dried ones soaked and replaced. Soak Kuan Dong Hua, Sha Shen, and Jie Geng separately, decoct, strain, repeat 2–3 times until no bitterness remains, then drain and set aside. Soak and clean golden needle mushrooms and black fungus. Cut tofu puffs, tofu skin, and green peppers into strips. Combine all prepared ingredients and stir-fry in a wok with salt, sugar, MSG, and scallions. Drizzle with sesame oil just before serving.
This dish is nutritionally rich and uniquely flavorful. Lily bulbs and Kuan Dong Hua are excellent for moistening lungs and relieving thirst. Combined with Sha Shen (moistening lungs and nourishing yin) and Jie Geng (promoting lung function and relieving thirst), they effectively nourish lung yin and relieve thirst.
Ren Shen Jin Yin Hua Winter Melon Soup
· Ingredients: 400 grams of winter melon, 100 grams of salted pork or ham, 30 grams of Tai Zi Shen (Prince Ginseng), 10 grams of Jin Yin Hua (Honeysuckle), and appropriate amounts of MSG and scallions.
· Preparation: Slice salted pork or ham, wash and cut winter melon into thin slices. Combine Tai Zi Shen and Jin Yin Hua, decoct in water until Tai Zi Shen becomes soft. Remove Jin Yin Hua and discard. Clarify the decoction. Add salted pork or ham and winter melon to water, cook until tender. Add Tai Zi Shen, MSG, and scallions, mix in a small amount of clarified decoction, bring to a boil and serve.
This soup is based on the common summer dish of salted pork and winter melon. It has a light, fresh taste and helps strengthen vital energy, clear heat, detoxify, and prevent heat boils and prickly heat. It is an essential refreshing soup during summer.
