Since alcohol is detrimental to the liver, sugar offers some protective effect on the liver and circulatory system. Acidic foods react with ethanol in alcohol through "esterification," forming "ethyl acetate," which mitigates ethanol’s adverse effects on the central nervous system and provides some relief from intoxication.
