Dried Shrimp and Sea Cucumber

Dried sea cucumber 150g, salt 3g, dried shrimp 150g, monosodium glutamate 3g, meat broth 500ml, starch 6g, green onion and ginger each 15g, lard 30g, cooking wine 30g, soy sauce 6g. Place dried sea cucumber in pot with water, bring to boil over low heat, remove from heat, let it soften and swell, then take out, remove internal organs and impurities, wash clean. Put back in pot, add water, bring to boil over low heat, remove from heat again, let it swell until fully expanded (during this process, avoid contact with oil or salt to prevent oil dissolving it or salt causing contraction). Score the sea cucumber inside with a cross-shaped cut, blanch briefly in boiling water, drain and set aside. Wash dried shrimp, place in bowl, add water and wine, steam for 10 minutes, then remove. Heat wok, add lard, fry ginger and green onion until fragrant, remove, pour in cooking wine, add meat broth, salt, soy sauce, sea cucumber, dried shrimp, simmer until thickened into rich gravy, thicken with starch, add monosodium glutamate, remove from heat. Function: Nourish yin, enrich blood, supplement kidney, moisturize dryness, enhance immune function.
